The Lot M49 was fermented using the Intrinsic Cherry method. In this fermentation method, the coffee cherries are filled into bags after harvest and can ferment aerobically in them with the air supply open. The average temperature is 30 ° Celsius. Depending on the outside temperature, aerobic fermentation lasts between 12 and 72 hours.
Davis Quiroz is part of a reserve microlot program of various farms in the La Palma & El Tucan region.
