Fragile x Subtext✨
We’re very excited for the launch of this collaboration together with Subtext Coffee in Toronto, an exclusive competition lot washed Pink Bourbon from the producer Robert Pillimue. This Pink Bourbon was the winner on the Occidente table at the Copa de Oro Competition and went on to take 4th place overall. We find green mango, honeysuckle, apricot, white grape in the cup, with a juicy & vibrant acidity.

Robert is a member of Martir Coffee, an association based in La Plata, Huila. In fact, he is the only member of the group that is not based in La Plata, or even Huila, for that matter. Paze is right across the border from La Plata but in the department of Cauca. Robert and his family produce a wide range of varieties at their farm, La Reforma: Castillo, Colombia, Tabi, Gesha, Red Bourbon and Pink Bourbon. The majority of the coffee that Robert sells to our importing partner Osito gets tagged for micro-lot separation due to the high quality of his and his family’s work.
Available in filter roasted, will be served in-house as espresso and filter in late August, stay tuned.
