Kedir Bali is a pioneer coffee producer who encourages other farmers to follow his footsteps in producing high-quality coffee. He advises fellow farmers on how to harvest coffee, and how to dry coffee for the specialty market. The family members of the smallholder farmers pick small amounts of coffee that they process on Kedir’s farm. Processed as a natural, it is dried for about 15 days on African drying beds on shade nets or hessian cloths and constantly rotated for airflow.
