All the coffee processed by Las Lajas is produced by the Chacón family, and predominantly Oscar and Francisca who represent the third generation of producers in their family. Located in the province of Alajuela, Sabanilla, Costa Rica they have gained a reputation of producing high quality lots. Most recently, in the last 5 years they have begun diversifying the varietals they produce.

As for processing, it has undergone a traditional honey process, with an additional stage where the coffee cherry is added to a fermentation tank for 84 hours before it is then laid to dry.
