A very sparkling Sudan Rume from Finca La Riviera in Colombian. This natural cold press coffee is very unique with tasting notes of yuzu, lemongrass, raspberry and orange blossom.

The cherries undergo an initial fermentation process where the temperature is allowed to rise to 40-45°C over 2-3 days. Once fermentation is complete, the cherries are transferred from the GrainPro bags to tanks for the next fermentation stage. During the second fermentation, the cherries are submerged in water kept between 0-8°C and undergo a controlled cold press fermentation for up to four days. This step maximizes the potential of the coffee beans. After fermentation, the cherries are moved to parabolic, open, and ventilated African beds for drying.
