This is a stunning Wush Wush by way of Jose Giraldo at Cafe 1959. Jose is a 3rd generation coffee producer in a family that has been growing coffee for over 50 years. This coffee is named after his late mother, Clara Giraldo, who had a heavy impact on Jose's life and is where the cafe1959 name itself comes from.
The Las Marias Estate sits at an altitude of 1950masl within the forests of the Andes Mountain Range. They have planted only rare and exotic varieties and are one of the very few farms in Colombia to have 'Orange-Striped Wush Wush. We are very fortunate to have purchased this extremely rare variety.
This coffee underwent 120 hours of anaerobic fermentation before it was transferred to African-style raised beds for slow drying. Jose also stalls the drying at around the 192nd hour to increase the microbial load and encourage the natural yeast to ferment further.
This coffee is absolutely deserving of our Competition category and is likely the best tasting Wush Wush we've ever had on our cupping table.
In the cup we're tasting notes of orange sherbet, grapefruit, and white peach.
