This coffee is a collaboration between Forest coffee, grown by producer Don Ronald on his farm El Diluvio and processed at the wet mill of El Vergel.
It's of the Tabi variety grown at 1600masl. It’s a 140 hour fermentation which is mixed twice a day to “optimise the blend”. El Diluvio is located near the town of Herveo in the department of Tolima. On it Don Ronald, who has worked in coffee his entire life is growing 9 different varieties ranging from 1000 to 3000 trees of each. He has always been fascinated with flavour but never produced any natural coffees until now! They called it “Citrus Winds” and in the cup we’ve tasted mint, lemongrass and a range of citric fruits.
