We are so proud of our Head Barista Daniele Ricci taking the title this year at the Italian Barista Championship with 3 beautiful coffee from the same group of farmers, the Veci Project.
This one was used for his milk beverage.
In the cup, you will find a beautiful note of Strawberry, yogurt and blueberries finish. The intensity of strawberries is very impressive making it perfect for a milk beverage.
After picking the ripest cherries and hand selecting them, they were fermented during 8 days then depulped and placed again in plastic sealed barrels with micro organisms creating flavors of strawberries for 8 days in anaerobic environment.
The drying took 13 days in a sun dryer and then bagged in grain-pro bags and stored during 1 month in a cooler warehouse to stabilize.
