Variety

It is believed that this variety originally comes from the province of Pichincha in Ecuador.

Unfortunately, there is little information available about Sidra. Some claim that Sidra comes from a regional coffee farm belonging to Nestlé, which created hybrids of Ethiopian and bourbon varieties. It is reported that Don Olger Rogel was the first person to introduce Sidra, as well as Typica Mejorada to the Ecuadorean coffee sector. Although the plant closed some time ago, Sidra is believed to have been one of the “unpublished” varieties developed by Nestlé. Initially, it was reported that Sidra was created as a result of crossing Typica and Bourbon - two high-quality varieties from which many of today's coffee plants are derived.

Process

This process is to take closed atmosphere treatment to a higher level.

During fermentation, mosto is added, or “juice” resulting from another fermentation of coffee (more precisely Java). This creates a kind of “party of microorganisms”, which causes a unique taste. Then the grains are placed in plastic tanks for 72-hour fermentation. The last phase is a two-stage drying process: first mechanical work in the silo to avoid the pitfalls associated with excessive fermentation. Then the grains base in the sun for about 18 days.
