Bolivia - Los Rodriguez Waliki Java 150g
This microlot of 100% Java varietal comes from a new and small farm called Waliki, owned by the Rodriguez family. The family's approach to coffee production has been methodical, innovative and scientific and this can be reflected in areas like the process of this coffee.
Coco Natural: After picking, the coffee is first washed and laid out to dry on African raised beds. After one week, the coffees are placed in a coco dryer which helps to maintain slow and consistent drying. The coffees sits for 35 hours and is turned every 30 minutes, temperatures is controlled to no higher than 40 deg. Once dried the coffee is hulled and then sorted by hand under UV light.
